Pisco Sour

2 oz Pisco
3/4 oz simple syrup
3/4 oz lime juice
3/4 oz egg white

Combine all ingredients except bitters in a shaker half filled with ice cubes, shake well, and strain into a cocktail glass. Dot foam with bitters.
